Myjuan Unique Gomez, known around the gym as Bo, staged a grand opening of his new venture on September 10.
Bo is also a membership salesman at Princeton Fitness and Wellness Center. He enhanced this passion for fitness with his love of flavor and community by founding and opening his Unique Eats Café.
Myjuan Unique Gomez, known locally as “Bo,” opened his Unique Eats Café in September inside the Princeton Fitness and Wellness Center on Route 206.
Bo, a former sushi chef with a passion for flavor and fresh, wholesome meals that fuel an active lifestyle.
“For more than four years, I immersed myself in the art of cooking and the joy that comes from serving others a full, refreshing meal,” he says.
“Cooking has always been more than just a job for me — it’s a way to connect with people through food.”
“Opening my own restaurant or food truck was always a goal, and when the opportunity arose to create Unique Eats Café, it felt like the perfect fit.”
Working inside the Princeton Fitness and Wellness Center in the membership office gives him an inside track to his restaurant customers. He is a careful listener, and learned that gym members want fresh, wholesome, and flavorful meals that fuel their active lifestyles. That insight shaped the menu and spirit of Unique Eats.

“Unique” is also Bo’s middle name. “The name felt right. I put my heart and soul into every dish. More importantly, it’s a dedication to my children, Layla and Unique, who inspire me every day.”
The menu includes all-day breakfast, salads, sugar-free smoothies, protein bowls, burgers, and dinners to go, or eat-in.
